Keep the calendar tied to real capacity
Opening hours, bookable hours, and service duration are not the same thing. Include setup time, breaks, and likely delays for each service, then display only slots the team can actually fulfill. If two people serve customers at once, set capacity from the staff present, not a theoretical maximum. Put temporary closures on both the page and calendar.
